Winemaking
Hand-harvested grapes, fully destemmed, followed by 45 days of skin maceration with manual punch-downs. Fermentation takes place with indigenous yeasts at controlled temperature over 25 days. The wine is then cold-stabilised and aged in stainless steel for six months, preserving its character and structure.

Food Pairing
Ideal with nuts, hard-rind cheeses, game dishes and traditional Portuguese convent sweets, where its richness and structure can stand up to intense flavours.

Tasting Note
Deep toasted yellow in colour. On the nose, it shows complex notes of wax, dried straw and ripe fruit reminiscent of persimmon. On the palate, it has an impressive, almost surprising texture: long and rich, supported by firm acidity and a subtle salty edge on the finish.
